We were the only people booked into Nesbitt Castle over Christmas and it was quite lovely. The room was clean, comfortable and en suite with an old fashioned bathtub, which I liked even though it was a bit impractical. The room was serviced daily, and any query we had was dealt with by the staff swiftly.
The food was fairly average, not amazing, not terrible. The bar was severely under stocked, and no mixers were available for drinks, which I found a bit odd.
Overall, even though the service was somewhat lacking in skill, this was made up for in enthusiasm, as everyone was super friendly. It was an experience, and pretty cool to stay in the castle but for the price it would not be something I would repeat. This place mainly gets used as a wedding venue (it really is beautiful), rather than as a high quality hotel. Still had a good time
